The Calvarino vineyard is the original nucleus of the family homestead, where the traditional varieties, Garganega and Trebbiano, are grown in their customary percentages, respectively 70% and 30%. The soil is volcanic in origin rich in basalt and Tufa. It represent Soave?s highest and finest quality level: lively, crisp and fruity, complex on the palate, with minerality, green almond and a precise and well balanced finish. The first Calvarino label was made in 1971. It matches a great variety of dishes, and is ideal with vegetable terrines, cheese souffl?s, asparagus risotto and delicate fish dishes, and a terrific drop all on its own as soon as you arrive home. - Ian Cook, FWC.
