As mentioned in my introductory blurb to this offer, Depuis is a departure of style for Bass Phillip. An experiment of sorts. While Bass Phillip’s Pinots are typically 100% destemmed, this goes the other way and uses 100% whole bunch fermentation. This is all tied into the new ownership and new winemaker, who commonly uses such techniques in Burgundy. The colour of the wine is a touch lighter, and the flavours show much more spice and chew, with black cherry a dominant flavour. Pleasingly, there is a great elegance to the wine and it is texturally quite fine. Going forward, Ned suggests that Bass Phillip may look to include small portions of whole bunch (10-20%) across a range of the Pinots. Time will tell… - Ches Cook, Five Way Cellars.
