Mix of 230, Mudgee and 111 clones, hand harvested, hand destemmed retaining about 70% whole berries. On skins for 11 days prior to basket pressing to a 500L Clay Tinajas (amphorae) from Moreno Leon where it sat uninterrupted for 9 months. Racked to stainless for a month prior to bottling, then 5 months in bottle before release.
