Cherubini 'Sui Generis' Franciacorta NV

100% Chardonnay that spends 36 months on lees adding layers of autolytic character (e.g toasted brioche) that combine with lovely oxidative notes that add flavours of bruised orchard fruit and heading to baked apple character. Deliciously pure and refined drinking. Cherubini is technically located just outside of the Franciacorta DOCG but is a very worthy inclusion here. - Ches Cook, Five Way Cellars.
