I also tasted the "Primavera 2025" bottling of the NV Fino, which is younger and more pungent than the bottling from 2023 I tasted next to it. I really like this bottling, which displays a bright old-gold color and a pungent nose of wet chalk and esparto grass. It has an agile palate that is seamless and nicely textured, with a chalky sensation and lively flavors, with a salty and bitter twist in the finish. 1,000 bottles produced. Sherry is one of my favourite styles of wine from anywhere in the world. The interest, flavour and complexity that the best wines of Jerez posses is often second to none, in my opinion. When offered a chance to try the latest offering from Bodegas Tradicion, we were never going to decline the invitation. These are amazingly delicious and intriguing wines and for those of you who love Sherry like I do, they are worth the investment. Keep in mind that the Amontillado and the Palo Cortado can stay open for months and stored in the fridge once the bottle is opened. The Fino though should be consumed within 4-5 days upon opening. The average age of fruit here is 10-12 years ? considerably older than most Finos. A bit like the grower-Champagne movement in France, the best producers in Jerez are seeking healthy, ripe fruit as opposed to sub-par, often under-ripe fruit that many others settle for. The quality here is clear ? there is a primary fruit character that is so ripe and so pure that it shines through in the glass, even above all of the character that is derived from winemaking and aging that comes with Sherry. Salty, chalky, flavours of dough and tidal pool, it?s intensely flavoured but light in the mouth. Amazing fino. ? Ches Cook, FWC.
