Holyman Project X Pinot Noir 2021
Project X 2021 shows a nice interplay between red and black fruit on the palate. The red fruit (dehydrated strawberry, raspberry) provides the charm while the flavours of cherry pip and mulberry below the surface provide some stuffing and a 'serious' edge to the wine. This is further enhanced by some black smoke reduction that will dissipate with some air (I'd suggest decanting this if drinking it young). The wine has plenty of youthful tannin that I see softening over time. Definitely one to stash away for a few years if you can. - Ches Cook, FWC.
A single block wine from another part of the vineyard which is slightly cooler than the Holyman block. Again, don't ask me about clones.
This wine is always 100% whole bunch and 100% new oak. All the bunches are selected by the pickers, where the stalks need to be lignified past the elbow. After 4-5 days of soaking, the grapes are trod once a day for a few days. We prefer not to over work this ferment so as soon as we can plunge it we do. As soon as the ferment finishes it is pressed and goes into a new 500 litre puncheon for 9 months.
The nose is cranberries and boysenberries. The palate is clean and crunchy with red fruits and hints of Campari and dried herbs. The finish is long and mouth filling with the drying tannins from the whole bunch component giving an insight to the age ability of this wine. Once again the 11.5% alcohol and the clean natural acidity will age this wine well. - Joe Holyman
