Pillot’s Aligoté is drawn from 1.5 hectares of Estate-owned vines in Chassagne and the nearby Côte Chalonnaise. The grapes were crushed and pressed before a natural fermentation. This cuvée then aged on its lees (with no stirring) in stainless-steel tanks and older oak barrels. Burgundy’s top growers continue to show us what the Aligoté grape is capable of in the right hands, and this is a great example of that trend. Importer’s notes.
