Whole bunch pressed to tank, racked off gross lees and put into barrel. Primary ferment takes place 100% in barrique all which are all seasoned, ranging from 1 to 7 years old, no new oak used. Aged for 9 months in barrel. Then, the barrels are blended and aged further on fine lees for about 7 months in tank.
The Five Ways staff knocked a bottle of this off recently. It really impressed. Medium bodied and perfectly behaved for a Grand Cru Chablis. By that i mean that the wine was super taut and linear yet also managed some significant expanse across the palate, too. In lesser appellations, it's often one or the other, but not here. Flavours span white orchard fruit and river pebbles with a nice lick of salinity to close. It builds weight and shows concentration without excess.
