A truly complex and deep sparkling, with richness and concentration sitting behind a facade of elegance. 20% of this is made up of solera wine of various ages, with gradual, minimal oxidation adding breadth and nutty savouriness, drawing comparisons to some of Champagne's great grower producers such as Jacques Selosse. Lemon pie, lemon meringue, lemon curd were descriptors that appeared in my notes. The wine has a saline bite to it reminding me of fino Sherry, while the bead is fine and persistent, drawing flavours out long into the distance.
