Armed with a dozen oysters, a Raveneau Montserrat Mains 2006, Chimes Of Freedom - The Songs of Bob Dylan playing in the background, my wife and I enjoy Saturday night in, in Sydney. Inspired by Benjamin McMahon’s article in the latest “Noble Rot” magazine, “The Continuing Adventures of Oysters Raveneau” we partake in the delights of the classic pairing of oysters and Chablis. Always beautiful, even if it’s a Petit Chablis (as against a Raveneau Premier Cru) I am awash with honey, beeswax, fresh lemon, lemon pith and zest, and the most amazing notes of the sea - fresh sea spray, sea salt, seaweed - the lot plus a certain richness from the bottle age. It’s fourteen years young.
