Roughly 60% Chardonnay, and 40% Sauvignon Blanc. After destemming, the grapes are put into oak vats and macerated with out temperature control. At the end of the alcoholic fermentation vats are filled and the wine stays in contact with the skins through December. After racking the wine rests in large format casks, for roughly 36 months. No preservatives added at any point and bottled without filtering or fining.
