A new wine for Billecart showing great purity and definition to the fruit. While it is zero dosage, it does not show the searing acidity that some other Brut Nature’s can show. Rather, this presents red apple, jasmine and an underlying chalkiness which is really noticeable and very appealing. The edges of the wine show flaky pastry with hints of toast gained from the 48 months spent on lees. It’s this lees aging that is an important aspect of the wine, helping tame the lively acid that so often comes with this category of Champagne. Overall a very impressive wine and a good reminder of why Billecart remains one of my preferred houses. – Ches Cook, FWC.
